Jen’s Granola Recipe

-3 cups oatmeal (not instant)

-1 cup slivered almonds

-1 cup chopped cashews/pecans/walnuts or whatever you prefer

-3/4 tsp salt

-4 tbsp brown sugar

-1/2 cup of shredded coconut

-1/4 cup olive oil

-6 tbsp maple syrup (can substitute honey or agave if needed)

Preheat oven to 250 degrees F.

In a large mixing bowl, mix together oatmeal, slivered almonds, chopped nuts, salt, and brown sugar.

In a separate bowl, mix olive oil and maple syrup then add the shredded coconut.

Add the wet mixture to the dry in the large bowl and mix to combine.

Line 2 cookie sheets with parchment paper and spread granola evenly.

Cook for 1 hour, stirring the granola every 15 minutes.

Let cool and add chocolate chips or dried fruit if you’d like.

Stored best in glass jars.
